bean salad

instant bean salad
1 tin of organic mixed beans, 1 tin of organic cannellini or flageolet beans, 1 tin of organic red kidney beans, 1 tin of organic sweetcorn, chopped celery, chopped spring onions, 1 small bottle of organic French dressing

Pour all the tinned beans into a colander and rinse and drain them thoroughly. Put the beans into a bowl and add the chopped celery and spring onions. Pour over as much French dressing as you like, mix well, and serve!


rice salad

easy rice salad
organic brown rice, frozen peas, spring onions, cashew nut pieces, tinned pineapple

Wash and cook the brown rice, rinse and drain it thoroughly, and place in a bowl. Cook the peas - use a lot of peas in this recipe! - and add to the rice. Chop the spring onions and the pineapple, and add those to the rice and peas. Fry the cashew nut pieces in olive oil until browned and crispy, and pour both the nuts and the oil over the rice mixture. Add sea salt and freshly ground black pepper. Gently stir the ingredients together, and serve hot or cold.


pasta and broccoli salad
wholewheat pasta shapes
1 head of broccoli
peanut butter
olive oil

Cook the pasta until just cooked (al dente), then drain and rinse with clean water. Combine the peanut butter with the olive oil and mix until it forms a thick sauce. Gently mix the pasta and peanut butter sauce together and put on a large flat plate. Cut the broccoli into large florets and steam or cook in a little boiling water until just cooked, and still bright green. Drain the broccoli and arrange it on the plate of pasta. Serve.
